Red Son is pretty good, although a bit of a mindfuck. Birthright by Mark Waid is a pretty decent origin story, I think you'll enjoy the art by Yu. Whatever Happened To The Man Of Tomorrow? is a two-part story by Alan Moore that's amazing. Superman For All Seasons by Jeph Loeb is great, and any Superman/Batman by Jeph Loeb is good too, especially the first few trades. A trade by Kurt Busiek called Redemption is good.
Whatever you do, don't read Superman For Tomorrow by Brian Azzarello. The art by Jim Lee is beyond amazing, but the story is all sorts of bad.
That's about it, I think. If you go a bit further back he tends to get campy, which sucks.
